Calamari & Vegetables Stir-Fry

Recipe adapted from Food Lovers: Chinese
Ingredients:
500g of Calamari (squid)
2 tbspn of oil
3 cloves of garlic, crushed
2 inches of fresh ginger/ 1tspn ginger powder
1 bell pepper, chopped and deseeded
200g string beans, halved and trimmed
3 tbspn oyster sauce
1 tbspn light soy sauce
2 tspn dark soy sauce
2 tspn cornstarch diluted in 2 tbspn water
2 tspn sesame oil
How to Cook:
1. Split the squid in half, remove the innards and bone. Wash and remove the skin, cut tentacles from head.
2. Cut the squid in small chunks, make criss-cross pattern with sharp knife on the flesh.
3. Boil a pan of water, blanch the squid for 15-30 seconds and drain.
4. Heat a clean pan with oil, stir-fry garlic and ginger, add the pepper and beans for about 1 minute.
5. Stir the oyster sauce, light and dark soy sauce, cornstarch mixture and sesame oil.
6. Add 1/3 cup of water, bring it to a boil.
7. Add the squid and simmer until cooked through, stir well.
8. Serve with parsley as garnishing (optional).
