Baked Macaroni & Cheese

Baked Mac and Cheese is a classic staple and it's so easy to make. Whether it's for lazy nights in, or for party purposes, baked mac and cheese never disappoints and is surely a crowd hit. Here's my take on the mac and cheese I love, and you ccould always add more things in the pasta such as fried bacon, salmon, onions, capsicum and other stuff for some flavour and crunch.
Ingredients (3 people portions):
- Macaroni elbows (2 cups)
- Grated Mozzarella (3/4 cup)
- Grated Parmesan (6 tbspn)
- Kraft Cheddar Cheese (6-8 slices)
- Nutmeg powder (1 tspn)
- Cayenne Pepper (4 dashes)
- 20g butter
- Flour (3 tbspn)
- Milk (4 cups)
- Salt and Pepper to taste
How to:
1. Cook Macaroni in a pot of boiling water, add a little rock salt and olive oil. Remove from boiling water once 3/4 cooked. Drain.
2. Melt butter in a separate pot. Add flour bit by bit and stir well, it should turn to lumps. If still watery, add a little bit more flour. Add (preferably warm) milk, cup by cup. Let it boil.
3. Add the parmesan and cheddar cheese in the milk gravy. Add the salt, pepper, cayenne and nutmeg in the mixture. The gravy should thicken and reduced a little. Taste, and add cheddar or other cheese if preferred.
4. Remove the macaroni and stir into the milk and cheese gravy. Pour into baking pan.
5. Top the mixture with grated mozzarella cheese, bake in oven until the top cheese layer becomes crispy or as preferred. Serve.
